Instructions
Preheat oven to 425°F (220°C). Mix olive oil, garlic, herbs, salt, and pepper; rub on chicken and place skin-side up on a baking sheet.
Halve potatoes, toss with olive oil, salt, garlic powder, pepper, and herbs; spread on the sheet.
Roast for 30 minutes, then flip potatoes, add green beans tossed in olive oil and seasonings, and roast for another 10–15 minutes until cooked.
Ensure chicken reaches 165°F (75°C). Serve hot with lemon slices if desired.
Notes
For extra flavor, squeeze lemon over the dish before serving.
