Ingredients
  

Chicken

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 lb baby potatoes halved
  • 8 oz fresh green beans

Herb & Garlic Mixture

  • 2 tbsp olive oil (for chicken)
  • 2 cloves garlic, minced
  • 1 tsp chopped rosemary
  • 1 tsp chopped thyme
  • 1/2 tsp salt (for chicken)
  • 1/4 tsp black pepper (for chicken)

Potatoes

  • 1 tbsp olive oil (for potatoes)
  • 1/2 tsp salt (for potatoes)
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper (for potatoes)
  • 1/2 tsp dried rosemary or thyme

Green Beans

  • 1 tbsp olive oil (for green beans)
  • Salt & pepper to taste

Instructions
 

  • Preheat oven to 425°F (220°C). Mix olive oil, garlic, herbs, salt, and pepper; rub on chicken and place skin-side up on a baking sheet.
  • Halve potatoes, toss with olive oil, salt, garlic powder, pepper, and herbs; spread on the sheet.
  • Roast for 30 minutes, then flip potatoes, add green beans tossed in olive oil and seasonings, and roast for another 10–15 minutes until cooked.
  • Ensure chicken reaches 165°F (75°C). Serve hot with lemon slices if desired.

Notes

For extra flavor, squeeze lemon over the dish before serving.
