Spices and Oils

  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon ground paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried parsley
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 pounds chicken thighs 6-8 pieces, patted dry
  • 1 tablespoon butter diced

Instructions
 

  • Preheat oven to 400°F. Line a rimmed baking sheet with foil and heat the pan in the oven while it preheats.
  • Mix olive oil and all spices in a bowl to form a paste.
  • Coat chicken thighs with the seasoning paste, rubbing it into the skin.
  • Place chicken on the preheated pan, dot with butter, and bake for 20 minutes. Baste with pan juices, then bake for an additional 10-15 minutes until internal temperature reaches 165°F.

Notes

For crispy skin, ensure the baking pan is preheated and pat the chicken dry before seasoning.
