Ingredients
  

Protein

  • 4 pieces boneless skinless chicken breasts (or thighs)
  • salt and pepper salt and pepper to taste
  • 1 cup chicken stock
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • ½ teaspoon red pepper flakes or more to taste
  • 1 tablespoon olive oil
  • cup finely diced shallots (or red onions)
  • 2 tablespoons salted butter
  • ¼ cup heavy cream
  • 2 tablespoons chopped parsley or basil

For serving

  • Prepared broccolini prepared broccolini for serving

Instructions
 

  • Pound chicken to ½ inch thickness, season with salt and pepper.
  • Mix chicken broth, lemon juice, garlic, and red pepper flakes.
  • Brown chicken in olive oil, then remove from skillet.
  • Sauté shallots, add broth mixture, and simmer until thickened. Whisk in butter and cream off heat.
  • Return chicken to skillet, coat with sauce, then bake at 375ºF for 5-8 minutes until cooked through. Garnish with herbs and serve.

Notes

Serve with rice, pasta, or veggies for a complete meal.
