long-grain white rice rinsed

10 oz diced tomatoes with green chillies

beef broth

black beans (optional)
Instructions
Heat olive oil in a large skillet over medium heat. Add onion and sauté until soft, about 3 minutes.
Add garlic and cook for 30 seconds. Add ground beef and cook until browned, then drain excess fat.
Stir in taco seasoning and tomato paste. Add rice, diced tomatoes, and beef broth; stir well.
Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes. Rest for 5 minutes before fluffing with a fork.
Notes
Feel free to add optional corn and black beans for extra flavor and texture.
