One-Pot Taco Rice with Ground Beef

Ingredients
  

Meat

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning
  • 1 tbsp tomato paste
  • 1 cup long-grain white rice rinsed
  • 1 can 10 oz diced tomatoes with green chillies
  • 1 ¾ cups beef broth
  • to taste Salt and pepper
  • ½ cup corn (optional)
  • ½ cup black beans (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add onion and sauté until soft, about 3 minutes.
  • Add garlic and cook for 30 seconds. Add ground beef and cook until browned, then drain excess fat.
  • Stir in taco seasoning and tomato paste. Add rice, diced tomatoes, and beef broth; stir well.
  • Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes. Rest for 5 minutes before fluffing with a fork.

Notes

Feel free to add optional corn and black beans for extra flavor and texture.
