Ingredients
  

Salmon

  • 4 fillets salmon fillets
  • 1 teaspoon seasoning salt
  • 3 tablespoons olive oil divided
  • 1 large onion finely diced
  • 1 medium green bell pepper finely diced
  • 1 medium red bell pepper finely diced
  • 3 cloves garlic minced
  • 1 cube chicken bouillon
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • salt and pepper to taste salt and pepper
  • 1.5 cups long grain rice rinsed
  • 3 cups chicken broth low sodium or vegetable broth
  • 1 lemon lemon zest and juice
  • 1 tablespoon fresh parsley for garnish

Instructions
 

  • Season the salmon fillets with seasoning salt.
  • Sear the salmon in 1 tbsp olive oil until golden, then set aside.
  • Cook onion and bell peppers in 2 tbsp olive oil until translucent, add garlic, then toast rice with spices.
  • Add broth and lemon zest, bring to simmer, then place salmon on top, cover and cook 18-20 minutes.
  • Finish with lemon juice, garnish with parsley, and serve warm.

Notes

Ensure rice is rinsed well to prevent clumping and adjust seasoning as needed before serving.
