Ingredients
  

Protein

  • 4 pieces boneless, skinless chicken breasts

Aromatics

  • 4 cloves fresh garlic, minced

Grains

  • 1 cup long-grain white rice

Broth & Sauces

  • 2 cups low-sodium chicken broth
  • 3 tbsp unsalted butter
  • 2 tbsp fresh parsley or thyme, chopped

Other

  • 1 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • to taste N/A Salt and pepper

Instructions
 

  • Chop garlic, measure rice, and trim excess fat from chicken.
  • Heat oil and butter in a large pot, sauté garlic until fragrant, then cook chicken until browned.
  • Stir in rice, chicken broth, and soy sauce; mix well.
  • Cover and simmer on low for 20 minutes until rice absorbs liquid and chicken is cooked.
  • Remove from heat, stir in herbs, and fluff before serving.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of cheese before serving.
