Instructions
Heat olive oil in a large pot over medium heat.
Add chicken and Cajun seasoning; cook until browned, then remove and set aside.
Sauté onion and garlic until translucent. Add bell peppers and cook 3-4 minutes.
Return chicken, add broth, coconut milk, and pasta. Bring to boil, then simmer 15-20 minutes until cooked and thickened.
Season with salt and pepper, garnish with green onions and parsley before serving.
Notes
Use gluten-free pasta if needed for dietary restrictions.
