  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 piece onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper red bell pepper sliced
  • 1 yellow bell pepper yellow bell pepper sliced
  • 1 cup chicken broth
  • 1 can (13.5 oz) coconut milk
  • 8 ounces pasta of choice
  • to taste Salt and pepper
  • 2 green onions green onions chopped
  • for garnish Fresh parsley

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken and Cajun seasoning; cook until browned, then remove and set aside.
  • Sauté onion and garlic until translucent. Add bell peppers and cook 3-4 minutes.
  • Return chicken, add broth, coconut milk, and pasta. Bring to boil, then simmer 15-20 minutes until cooked and thickened.
  • Season with salt and pepper, garnish with green onions and parsley before serving.

Notes

Use gluten-free pasta if needed for dietary restrictions.
