Ingredients
For the Bolognese

For the pasta

pasta shells

double heavy cream

grated cheddar
To serve

Instructions
Heat olive oil and sauté diced onion, carrot, celery, and red pepper for 5 minutes until softened.
Add minced garlic and cook for 1 minute, then add minced beef and cook until browned, breaking it apart.
Stir in tomato purée, oregano, thyme, Worcestershire sauce, beef stock, milk, chopped tomatoes, salt, and pepper. Bring to a boil.
Add pasta shells, simmer covered for 17-22 minutes until tender and liquid absorbed, stirring occasionally.
Remove lid, stir in cream and cheddar until melted and sauce is creamy. Serve topped with chives, chilli flakes, and parmesan.
Notes
For a richer flavor, use full-fat milk and cheese. Adjust seasoning to taste before serving.
