One Pot Cheesy Cajun Beef Rice

  • 1 spray low calorie spray
  • 1 pcs onion, finely diced
  • 1 small carrot, finely chopped
  • 3 cloves garlic, crushed
  • 455 g extra lean beef mince
  • 1.5 tablespoons cajun seasoning
  • 1 tablespoon paprika
  • 1 tablespoon tomato paste
  • 1 pcs red bell pepper, finely chopped
  • 180 g long grain white rice, dry
  • 480 ml chicken stock
  • 120 g colby cheese, grated or cheddar/red leicester and mozzarella mix
  • 2 spring onions chopped
  • to taste salt and pepper to season
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon paprika
  • 3 tablespoons reduced fat mayo
  • 3 tablespoons fat free Greek Yoghurt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder

Instructions
 

  • Mix Cajun mayo ingredients in a bowl and set aside.
  • Sauté onion, carrot, and garlic in a sprayed pan until softened.
  • Add beef, cook until browned, then stir in seasonings and tomato paste.
  • Stir in peppers, rice, and stock; simmer covered for 12-15 minutes until rice is cooked.
  • Remove from heat, let rest covered for 10 minutes, then fluff rice. Top with cheese, melt under broiler, garnish with spring onions, and drizzle with Cajun mayo before serving.

Notes

For extra flavor, use a mix of cheeses and adjust seasoning to taste.
