Ingredients
  

Pasta

  • 12 oz Barilla Pasta Pronto
  • 11 oz Tyson Grilled and Ready Chicken Strips half the bag
  • 4 oz light or fat free cream cheese
  • 1 cup fat free half and half
  • 3 cups low sodium chicken broth
  • 1 cup shredded parmesan cheese the good stuff, not from a container
  • 1 red pepper red pepper sliced thin
  • 1 orange pepper orange pepper sliced thin
  • 1 medium onion diced thin
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 tsp garlic powder
  • 0.5 tsp cajun seasoning depending on taste
  • 2 tsp olive oil

for garnish

  • to taste fresh basil additional parmesan cheese

Instructions
 

  • Heat olive oil in a large pot, cook peppers, onions, and chicken for 2-3 minutes until veggies soften and chicken browns.
  • Add cream cheese, salt, pepper, garlic powder, and cajun seasoning; stir and reduce heat to medium.
  • Pour in half and half and chicken broth, add pasta, and stir to cover noodles with liquid. Cook for 8-10 minutes until al dente and sauce thickens.
  • Stir in parmesan cheese, adjust seasoning, and loosen with additional broth if needed. Garnish with basil and parmesan, serve immediately.

Notes

Use fresh ingredients for best flavor and adjust seasonings to taste.
