Ingredients
  

Protein

  • 1 lb boneless, skinless chicken breasts (about 3-4 breasts), cubed

Pasta

  • 8 oz penne pasta (whole wheat or gluten-free)

Sauces & Dressings

  • 1 cup buffalo sauce
  • 1 cup ranch dressing

Broth

  • 2 cups low-sodium chicken broth

Vegetables

  • 2 cups fresh spinach (or 1 cup frozen)

Cheese

  • 1 cup shredded cheddar cheese (or Monterey Jack)

Garnish

  • 1/4 cup green onions, sliced (for garnish)

Instructions
 

  • Cube the chicken and measure all ingredients.
  • Sauté chicken in a large pot until golden, about 5-7 minutes.
  • Add pasta, buffalo sauce, broth, and ranch; stir to combine.
  • Bring to a boil, then simmer covered for 15-20 minutes until pasta is al dente.
  • Stir in spinach until wilted, sprinkle cheese, cover until melted, then garnish with green onions.

Notes

For extra flavor, top with additional green onions or hot sauce.
