Instructions
Cut chicken into bite-sized pieces, season with salt, pepper, and paprika.
Melt 2 tablespoons butter in a skillet, cook onion for 1-2 minutes, add chicken and Italian seasoning, cook until golden, then set aside.
Melt remaining butter, stir in garlic and rice, cook 1 minute, add broth, and simmer covered for 10-12 minutes until rice is tender.
Stir in cream, Parmesan, chicken, and parsley; season if needed, then serve garnished with extra parsley and Parmesan.
Notes
Use fresh parsley for best flavor and adjust seasoning to taste.
