One Pan Stovetop Parmesan Chicken and Rice

Ingredients
  

Protein

  • 1.5 lb chicken breast (skinless, boneless)
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon paprika

Dairy & Fats

  • 4 tablespoons butter divided
  • 2 teaspoons Italian seasoning divided
  • 1 small white onion minced
  • 1 small garlic clove minced
  • 1.5 cups rice

Broth & Cream

  • 2.5 cups chicken broth
  • 1 cup heavy whipping cream
  • 0.25 cup grated parmesan cheese

Herbs & Garnish

  • 1 tablespoon parsley chopped, plus more to garnish

Instructions
 

  • Cut chicken into bite-sized pieces, season with salt, pepper, and paprika.
  • Melt 2 tablespoons butter in a skillet, cook onion for 1-2 minutes, add chicken and Italian seasoning, cook until golden, then set aside.
  • Melt remaining butter, stir in garlic and rice, cook 1 minute, add broth, and simmer covered for 10-12 minutes until rice is tender.
  • Stir in cream, Parmesan, chicken, and parsley; season if needed, then serve garnished with extra parsley and Parmesan.

Notes

Use fresh parsley for best flavor and adjust seasoning to taste.
