Ingredients
  

Broth

  • 2 cups chicken broth (Swanson preferred)

Dijon mustard

  • 4 tbsp dijon mustard (Grey Poupon preferred)

Honey

  • 4 tbsp honey

Garlic powder

  • 2 tsp garlic powder

Smoked paprika

  • 1/2 tsp smoked paprika

Chicken breasts

  • 4 pieces chicken breasts (pounded to an even 1-inch thickness)

Long grain white rice

  • 1 cup long grain white rice

Dried thyme

  • 1/2 tsp dried thyme

Salt

  • 3/4 tsp salt

Black pepper

  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Mix chicken broth, dijon mustard, honey, garlic powder, smoked paprika, thyme, salt, and pepper in a bowl.
  • Place chicken breasts in a baking dish, pour the mixture over, and add rice around the chicken.
  • Cover with foil and bake for 40 minutes until chicken is cooked and rice is tender.
  • Remove from oven, let rest for 5 minutes, then serve hot.

Notes

For extra flavor, garnish with fresh herbs or a squeeze of lemon before serving.
