Instructions
Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, cook for 6 minutes per side until golden, then remove and rest.
Sauté minced garlic in the same skillet for 1 minute until fragrant.
Add pasta and chicken broth, bring to a boil, cover, and simmer for 10 minutes until pasta is al dente.
Lower heat, stir in heavy cream and Parmesan cheese until combined.
Slice chicken, return to skillet with spinach if using, toss gently to coat, and serve warm.
Notes
For extra flavor, sprinkle additional Parmesan on top before serving.
