One Pan Garlic Parmesan Chicken Pasta

Ingredients

  • 680 g boneless, skinless chicken breasts
  • 225 g penne or rotini pasta
  • 4 cloves fresh garlic, minced
  • 480 ml low-sodium chicken broth
  • 240 ml heavy cream
  • 100 g freshly grated Parmesan cheese
  • 30 ml olive oil
  • 60 g fresh spinach (optional) about 2 cups

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, cook for 6 minutes per side until golden, then remove and rest.
  • Sauté minced garlic in the same skillet for 1 minute until fragrant.
  • Add pasta and chicken broth, bring to a boil, cover, and simmer for 10 minutes until pasta is al dente.
  • Lower heat, stir in heavy cream and Parmesan cheese until combined.
  • Slice chicken, return to skillet with spinach if using, toss gently to coat, and serve warm.

Notes

For extra flavor, sprinkle additional Parmesan on top before serving.
