Protein

  • 2–3 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil (for chicken)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt and freshly ground black pepper
  • 1 tablespoon lemon juice or zest

Vegetables

  • 1 pound baby or gold potatoes, halved
  • 1 tablespoon olive oil (for potatoes)
  • to taste Salt and pepper
  • ½ teaspoon dried oregano or Italian seasoning
  • ¾ pound fresh green beans, trimmed
  • 1 tablespoon olive oil (for green beans)
  • 1 clove garlic, minced (optional)
  • to taste Salt

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a baking dish.
  • Toss potatoes with olive oil, salt, pepper, and oregano. Roast for 10 minutes.
  • Mix olive oil, garlic, herbs, lemon, salt, and pepper; rub onto chicken. Add to pan.
  • Return to oven; roast for 15 minutes. Add green beans, toss with oil, salt, and garlic. Roast 15–20 minutes.
  • Rest chicken 5 minutes, then slice. Serve everything from the pan.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
