  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can 14.5 ounces diced tomatoes, with juices
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 8 ounces penne pasta, uncooked
  • 0.5 cup grated Parmesan cheese

Garnish

  • Fresh basil leaves, for garnish

Instructions
 

  • Season chicken with salt and pepper. Cook in a skillet with olive oil until golden and cooked through, then set aside.
  • Sauté minced garlic in the same skillet until fragrant. Add diced tomatoes, chicken broth, heavy cream, and Italian seasoning; simmer.
  • Stir in uncooked penne pasta, cover, and cook until pasta is al dente, about 12-15 minutes, stirring occasionally.
  • Slice cooked chicken and return to skillet. Add Parmesan cheese and stir until melted. Garnish with basil and serve.

Notes

Ensure pasta is mostly submerged in sauce for even cooking.
