Instructions
Preheat oven to 400°F (200°C). Season chicken with spices. Sear in skillet 3–4 mins per side, then set aside.
Sauté garlic in remaining oil and butter until fragrant. Add potatoes, herbs, salt, and pepper; stir to coat.
Pour in chicken broth, nestle chicken on top, and transfer skillet to oven. Bake 25–30 mins until cooked through.
Remove from oven, drizzle with lemon juice, sprinkle parsley, and serve straight from the pan.
Notes
Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
