Ingredients
  

Meat

  • 6 pieces boneless, skinless chicken thighs

Vegetables

  • 1.5 lbs baby potatoes (halved)

Oils & Fats

  • 3 tbsp olive oil
  • 2 tbsp unsalted butter

Spices & Herbs

  • 4 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 0.5 tsp chili flakes (optional)

Liquids

  • 0.5 cup low-sodium chicken broth
  • 1/2 lemon juice of 1/2 lemon

Fresh Herbs

  • 2 tbsp fresh parsley (chopped, for serving)

Instructions
 

  • Preheat oven to 400°F (200°C). Season chicken with spices. Sear in skillet 3–4 mins per side, then set aside.
  • Sauté garlic in remaining oil and butter until fragrant. Add potatoes, herbs, salt, and pepper; stir to coat.
  • Pour in chicken broth, nestle chicken on top, and transfer skillet to oven. Bake 25–30 mins until cooked through.
  • Remove from oven, drizzle with lemon juice, sprinkle parsley, and serve straight from the pan.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
