  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice (or brown rice)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 medium onion (diced)
  • 1 diced bell pepper (red or green)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 lime juice of lime
  • for garnish Fresh cilantro (chopped)
  • 1 avocado Avocado
  • to taste Cheese
  • to taste Sour cream
  • to taste JalapeƱos

Instructions
 

  • Dice chicken, season with spices, and chop vegetables.
  • Cook chicken in olive oil until golden, then add vegetables and rice.
  • Add water, bring to a boil, then simmer covered for 15-20 minutes.
  • Fluff rice, squeeze lime, and garnish with cilantro. Add optional toppings.
