Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Combine all ingredients in a bowl or on the baking sheet, tossing to coat evenly.
Spread everything on the baking sheet and bake for 1 hour at 375°F, then increase to 425°F and bake for 10-20 minutes until golden.
Remove from oven, serve 2 thighs with about 8 pieces of squash per serving, and garnish with parsley if desired.
Notes
Ensure squash is prepped properly for even cooking.
