One Pan Chicken and Squash Dinner

Ingredients

  • 1 piece butternut squash prepped according to directions
  • 8 pieces chicken thighs fat trimmed
  • 10 cloves garlic peeled
  • 3 Tbsp olive oil
  • 0.75 Tbsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 0.5 tsp crushed chili peppers optional
  • 2-3 twigs fresh thyme optional
  • 0.25 cup finely chopped parsley for garnish (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Combine all ingredients in a bowl or on the baking sheet, tossing to coat evenly.
  • Spread everything on the baking sheet and bake for 1 hour at 375°F, then increase to 425°F and bake for 10-20 minutes until golden.
  • Remove from oven, serve 2 thighs with about 8 pieces of squash per serving, and garnish with parsley if desired.

Notes

Ensure squash is prepped properly for even cooking.
