Ingredients
  

Protein

  • 1 lb lean ground beef

Grains

  • 1 cup uncooked long-grain white rice rinsed

Vegetables

  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 1 cup frozen peas and carrots

Scallions

  • 3 pieces scallions thinly sliced, divided white and green parts

Liquids & Sauces

  • 1 3/4 cups water or low-sodium beef broth
  • 1/3 cup low-sodium soy sauce
  • 3 Tbsp brown sugar packed
  • 1 Tbsp rice vinegar
  • 1 Tbsp mirin or additional brown sugar
  • 1 Tbsp cornstarch
  • 1 tsp fresh grated ginger or 1/2 tsp ground ginger
  • 1 Tbsp toasted sesame oil
  • 1–2 tsp neutral oil for sautéing

Optional toppings

  • 1/4 tsp red pepper flakes optional
  • to taste toasted sesame seeds for garnish

Instructions
 

  • Whisk soy sauce, brown sugar, rice vinegar, mirin, cornstarch, ginger, sesame oil, and water until smooth; set aside.
  • Cook ground beef in a skillet until browned, then add oil, onion, garlic, and scallion whites; cook until fragrant.
  • Stir in rice and toast for 1-2 minutes, then pour in the sauce mixture and remaining water; simmer covered for 15 minutes.
  • Add peas and carrots, cook 3-5 minutes, then fluff rice. Garnish with scallion greens and sesame seeds before serving.

Notes

For extra flavor, add a sprinkle of toasted sesame seeds and red pepper flakes.
