One-Pan Beef & Potato Bake: Easy Weeknight Comfort Food

Ingredients
  

Meat

  • 1 lb ground beef or thinly sliced beef strips

Vegetables

  • 4 large potatoes peeled and sliced into thin rounds
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 cup beef broth or stock
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or rosemary
  • to taste Salt and black pepper

Optional toppings

  • shredded cheese, parsley shredded cheese, parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Sauté onion and garlic in 1 tbsp olive oil until fragrant. Add beef, season, cook until browned. Transfer to a plate.
  • In the same skillet, layer sliced potatoes, season, then spread beef mixture over them.
  • Pour beef broth over layers, cover, and bake for 45-50 minutes until potatoes are tender.
  • Remove cover, sprinkle cheese if desired, bake uncovered for 10 minutes until melted. Garnish with parsley and serve hot.

Notes

For extra flavor, add herbs or spices of your choice.
