  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 4 cups vegetable broth
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1 can (15 ounces) Great Northern beans, drained and rinsed
  • 1 cup chopped green beans
  • 1 cup small pasta (ditalini)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5-6 minutes.
  • Stir in garlic and cook for 30 seconds. Add tomatoes, tomato sauce, broth, seasonings; stir well.
  • Add zucchini, beans, and green beans; bring to a boil, then simmer for 15 minutes.
  • Stir in pasta and cook until tender, about 8-10 minutes. Add spinach and cook until wilted, 2-3 minutes.
  • Serve hot, topped with Parmesan cheese.
