Ingredients
  

Dairy

  • 1 tbsp unsalted butter (for greasing)
  • 5 cups whole milk
  • 1 cup heavy cream

Dry Ingredients

  • 1/2 cup fine or medium yellow cornmeal
  • 4 tbsp unsalted butter
  • 1/2 cup unsulfured molasses
  • 1/3 cup pure maple syrup
  • 1/4 cup packed light or dark brown sugar
  • 1/2 tsp kosher salt
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground nutmeg (optional)

Eggs and Flavoring

  • 3 large eggs
  • 2 tsp pure vanilla extract

For Serving

  • Vanilla ice cream for serving

Instructions
 

  • Preheat oven to 300°F (150°C). Grease a 2- to 2 1/2-quart baking dish and set a water kettle to boil.
  • Scald milk and cream, then whisk in cornmeal gradually until smooth. Cook on low, whisking for 6–8 minutes until thickened.
  • Remove from heat, stir in butter, molasses, maple syrup, brown sugar, salt, spices, and vanilla. Temper eggs with hot mixture, then whisk eggs back in and pour into dish.
  • Set dish in a water bath and bake for 2 hours, stirring once at 30 minutes. Rest for 15 minutes before serving warm with vanilla ice cream.
