  • 3 cups cooked chicken (rotisserie, poached, or canned)
  • ½ cup Greek yogurt or mayonnaise (or a blend of both)
  • 1 tsp Dijon mustard (optional for depth)
  • Zest and juice of 1 large lemon (about 2 tablespoons juice) lemon (zest and juice)
  • ½ cup finely chopped celery
  • ¼ cup finely diced red onion
  • 2 tbsp chopped fresh herbs (dill, parsley, basil, or tarragon)

  • ½ cup diced apple or grapes (optional for sweetness)
  • ¼ cup toasted almonds or walnuts (for crunch)

Instructions
 

  • Whisk together Greek yogurt or mayo, lemon zest, lemon juice, mustard, salt, and pepper.
  • Stir in chopped celery, onion, herbs, and optional fruit or nuts.
  • Gently fold in shredded or diced chicken until well coated.
  • Taste and adjust seasoning if needed.
  • Cover and refrigerate for at least 30 minutes before serving.
