Medjool dates (pitted and softened if dry)

unsweetened cocoa powder

rolled oats

nut butter (almond or peanut preferred, warmed slightly)

honey or maple syrup

vanilla extract
Optional toppings
chopped nuts, dried fruit, or sea salt
for rolling or flavoring
Instructions
Pulse dates in a food processor until sticky, about 30 seconds. Soak dry dates in warm water for 10 minutes if needed, then drain.
Add cocoa, oats, nut butter, honey, and vanilla. Blend until thick and fudgy, about 1-2 minutes.
Check mixture: if too dry, add water or more nut butter; if too sticky, add oats. Mix until workable.
Form mixture into 12 balls, place on parchment-lined tray.
Refrigerate for at least 30 minutes to set. Optional: roll in toppings before serving.
Notes
Store leftovers in an airtight container in the fridge for up to a week.
