No Bake Fudge Balls

These delicious no-bake fudge balls are quick to make, healthy, and perfect for a sweet snack or dessert.

Ingredients
  

Dried Fruits

  • 1 cup Medjool dates (pitted and softened if dry)
  • 1/2 cup unsweetened cocoa powder
  • 1 cup rolled oats
  • 1/2 cup nut butter (almond or peanut preferred, warmed slightly)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Optional toppings

  • chopped nuts, dried fruit, or sea salt for rolling or flavoring

Instructions
 

  • Pulse dates in a food processor until sticky, about 30 seconds. Soak dry dates in warm water for 10 minutes if needed, then drain.
  • Add cocoa, oats, nut butter, honey, and vanilla. Blend until thick and fudgy, about 1-2 minutes.
  • Check mixture: if too dry, add water or more nut butter; if too sticky, add oats. Mix until workable.
  • Form mixture into 12 balls, place on parchment-lined tray.
  • Refrigerate for at least 30 minutes to set. Optional: roll in toppings before serving.

Notes

Store leftovers in an airtight container in the fridge for up to a week.
