No-bake Brownie Balls

Delicious and healthy no-bake brownie balls perfect for a quick treat or snack. Made with dates, cocoa, and coated in melted chocolate, they are easy to prepare and customizable.

Ingredients
  

Main ingredients

  • 1 cup dried dates - 20 approx (or Medjool dates, pitted)
  • 2 tbsp oat flour or ground almonds substitute gluten free if needed
  • 2 tbsp nut butter almond, peanut, cashew, or biscoff
  • 2 tbsp honey or maple syrup use maple syrup for vegan
  • 1 tbsp ground seeds or protein powder
  • 1.5 tbsp cocoa powder
  • 1 tsp vanilla extract
  • Pinch salt
  • ½ cup puffed rice cereal substitute gluten free if needed
  • 100 g chocolate melted milk or dark, dairy free if needed
  • ¼ cup puffed rice cereal for coating, gluten free if needed

Instructions
 

  • If using dried dates, soak in boiling water for 5 minutes, then drain. Blend dates with other ingredients except puffed rice until smooth. Add puffed rice and blend briefly.
  • Divide mixture into 9 balls and chill in the fridge for 10 minutes.
  • Melt chocolate gently, stir in puffed rice, then coat each ball with chocolate. Chill for 20 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
