Ingredients
  

Dough

  • 1 1/2 cups all purpose flour
  • 1/2 cup unsalted butter (cold & cut into 1/4" cubes)
  • 2 cups granulated sugar

Filling

  • 4 pieces Meyer lemons zest and juice
  • 1 knob fresh ginger grated
  • 2 tablespoons molasses
  • 1 teaspoon white vinegar
  • 1 egg yolk egg yolk
  • 1 cup mascarpone
  • 2/3 cup Greek yogurt
  • 1/3 cup honey
  • 1 tablespoon zest of Meyer lemon
  • 2 tablespoons fresh squeezed lemon juice
  • 1 teaspoon pure vanilla extract

Instructions
 

  • Prepare the tart crust by mixing flour, sugar, and cold butter until crumbly, then press into a tart pan and chill.
  • Combine lemon zest, juice, grated ginger, molasses, vinegar, egg yolk, mascarpone, yogurt, honey, and vanilla to make the filling.
  • Pour the filling into the prepared crust and bake at 350°F (175°C) for 20 minutes until set.
  • Let the tart cool before serving. Garnish with additional lemon zest if desired.

Notes

Use fresh Meyer lemons for the best flavor.
