Instructions
Saute diced onion and pepper in oil until soft, then add garlic and cook briefly.
Add ground beef and cook until browned, then stir in taco seasoning and water.
Mix in beans, corn, rice, salsa, and broth; bring to a boil, then simmer covered for 20 minutes, stirring occasionally.
Optional: sprinkle cheese on top, cover, and let melt for 2-3 minutes.
Serve topped with avocado, cilantro, tomatoes, and lime juice or ranch as desired.
Notes
Feel free to customize toppings and spice level to taste.
