Mexican Beef and Rice Skillet

Ingredients
  

Vegetables

  • 2 Tablespoons olive oil (or coconut oil)
  • 1 medium yellow onion diced
  • 1 bell pepper bell pepper (any color) diced
  • 2 cloves garlic minced

Main Protein & Grains

  • 1 pound ground beef (93% lean)
  • 1 package (1 ounce) taco seasoning
  • 1/4 cup water
  • 1 cup mild salsa
  • 1 can (15oz) black beans drained and rinsed
  • 1 can (15oz) corn drained
  • 1 1/4 cups uncooked long grain white rice
  • 2 1/2 cups low sodium beef broth
  • 1/2 cup shredded Mexican cheese optional

Toppings

  • as desired sliced avocado
  • as desired chopped cilantro
  • as desired lime juice
  • as desired cilantro lime ranch
  • as desired cherry tomatoes

Instructions
 

  • Saute diced onion and pepper in oil until soft, then add garlic and cook briefly.
  • Add ground beef and cook until browned, then stir in taco seasoning and water.
  • Mix in beans, corn, rice, salsa, and broth; bring to a boil, then simmer covered for 20 minutes, stirring occasionally.
  • Optional: sprinkle cheese on top, cover, and let melt for 2-3 minutes.
  • Serve topped with avocado, cilantro, tomatoes, and lime juice or ranch as desired.

Notes

Feel free to customize toppings and spice level to taste.
