Bell Peppers

  • 1 red and 1 green Bell Peppers diced

Onion

Tomatoes

  • 2 medium Tomatoes diced

Jalapeño

  • 1 small Jalapeño sliced (optional)

Black Beans

  • 1 cup Black Beans drained and rinsed

Cheddar Cheese

  • 1 cup Cheddar Cheese shredded

Olive Oil

  • 2 tablespoons Olive Oil

Cumin

  • 1 teaspoon Cumin

Paprika

  • 1 teaspoon Paprika

Chili Powder

  • 1 teaspoon Chili Powder

Salt

  • 1 teaspoon Salt or to taste

Black Pepper

  • ½ teaspoon Black Pepper or to taste

Cilantro

  • Fresh Cilantro chopped for garnish

Avocado

  • 1 Avocado sliced for serving

Instructions
 

  • Heat olive oil in a skillet over medium heat and cook the ground beef until browned.
  • Add diced onions, bell peppers, and garlic; cook until vegetables are tender.
  • Stir in diced tomatoes, black beans, and spices; cook for 5 minutes.
  • Create small wells in the mixture and crack eggs into each; cover and cook until eggs are set.
  • Sprinkle shredded cheese, garnish with cilantro, and serve with sliced avocado and lime wedges.

Notes

For added heat, include jalapeño slices or hot sauce.
