Mediterranean Turkey Wrap

Ingredients
  

Tortilla wraps

  • 2 large whole-wheat or spinach tortilla wraps
  • 0.5 cup plain hummus
  • 200 g cooked turkey breast
  • 1 tsp dried oregano
  • 0.25 tsp garlic powder
  • 1 cup shredded romaine lettuce or mixed greens
  • 0.5 cup English cucumber
  • 0.5 cup cherry tomatoes
  • 0.25 cup red onion
  • 0.25 cup Kalamata olives
  • 2 tbsp fresh parsley
  • 50 g feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • pinch salt
  • a few cracks black pepper

Instructions
 

  • Whisk together olive oil, lemon juice, salt, and black pepper to make the dressing.
  • Toss turkey with oregano and garlic powder to season.
  • Slice vegetables, chop parsley, and combine with greens. Toss with half of the dressing.
  • Spread hummus on each tortilla, layer with seasoned turkey, veggie mixture, and feta. Roll tightly and slice diagonally.
  • Serve immediately or wrap for later.

Notes

For extra flavor, toast the rolled wraps briefly in a skillet before serving.
