Instructions
Preheat the oven to 400°F (200°C).
Arrange eggplant slices on a baking sheet and brush with olive oil.
Season with garlic powder, smoked paprika, cumin, oregano, salt, and pepper.
Roast in the preheated oven for 35 minutes, flipping halfway.
Garnish with fresh parsley and serve warm.
Notes
For a crisper texture, salt the eggplant slices and let them sit for 15-20 minutes before rinsing and proceeding with the recipe.
