  • 2 medium zucchinis sliced into half-moons
  • 2 medium yellow squashes sliced into half-moons
  • 1 pint cherry tomatoes halved
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • fresh basil for garnish (optional)

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, combine zucchinis, yellow squashes, and cherry tomatoes.
  • Drizzle with olive oil, add seasonings, and toss to coat.
  • Spread veggies on the baking sheet and roast for 30-35 minutes.
  • Stir halfway through roasting for even cooking.
  • Garnish with fresh basil and serve warm.

Notes

For extra flavor, try adding a squeeze of lemon juice before serving.
