Instructions
Cook pearl couscous on the stovetop and let cool.
Mix couscous with oil, lemon juice, Greek seasoning, salt, and pepper.
Add cucumber, tomatoes, feta, chickpeas, red onion, and parsley; refrigerate for 30 minutes.
Before serving, toss and garnish with additional parsley.
Notes
This salad can be prepared ahead and tastes even better after chilling.
