Ingredients
  

  • 4 boneless, skinless chicken breasts chicken breasts
  • 2 large zucchinis
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon garlic powder
  • Salt and pepper
  • 1 cup cherry tomatoes
  • 0.5 cup black olives
  • 0.5 cup sun-dried tomatoes
  • 0.5 cup crumbled feta cheese
  • 0.25 cup fresh parsley
  • 0.5 cup shredded mozzarella cheese Optional
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Preheat the oven to 375°F (190°C). Slice zucchini into thin rounds and season chicken with olive oil, oregano, basil, garlic powder, salt, and pepper.
  • Arrange chicken in a greased baking dish, layer zucchini slices around it, and sprinkle with cherry tomatoes, olives, and sun-dried tomatoes.
  • Bake for 30-35 minutes until chicken reaches 165°F (74°C). Remove, sprinkle feta cheese, and return to oven for 5-7 minutes until cheese is golden.
  • Garnish with fresh parsley and optionally drizzle with balsamic vinegar before serving.

Notes

Optional ingredients like mozzarella cheese can be added for extra flavor. Customize to your taste preferences!
