Ingredients
  

Meat

  • 1 lb grass-fed ground beef
  • 1 tbsp olive oil

Vegetables

  • 2 cups zucchini, cubed
  • 1 cup broccoli florets
  • ¾ cup red bell pepper, chopped
  • ½ cup red onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce or coconut aminos
  • to taste Salt and black pepper

Garnish

  • as needed Fresh parsley, chopped

Instructions
 

  • Heat oil in a skillet, sauté garlic and onion for 2 minutes.
  • Add ground beef, cook until browned, season with salt and pepper.
  • Stir in zucchini, broccoli, and bell pepper; cook 6–8 minutes until tender.
  • Mix in tomato paste and soy sauce; heat through.
  • Garnish with parsley and divide into containers for meal prep.
