Marry Me Chicken (In a Sun-Dried Tomato Cream Sauce)

Ingredients
  

Protein

  • 3 pounds boneless, skinless chicken breasts

Seasonings

  • salt to taste salt
  • freshly cracked black pepper to taste black pepper

Cooking Oil

  • 2 tablespoons olive oil

Aromatics

  • 2 cloves minced garlic

Broth & Cream

  • ¾ cup low-sodium chicken broth see Notes
  • ½ cup heavy cream at room temperature
  • ½ cup grated fresh parmesan cheese at room temperature, see Notes

Sun-Dried Tomatoes

  • 1 cup sun-dried tomatoes preferably packed in oil

Herbs & Spices

  • 1 teaspoon dried oregano more or less to taste
  • ½ teaspoon crushed red pepper flakes more or less to taste

Fresh Herbs

  • chiffonaded fresh basil

Cheese

  • grated fresh parmesan cheese

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a skillet and cook chicken until golden and cooked through. Remove and set aside.
  • Sauté garlic in the same skillet, then add sun-dried tomatoes, chicken broth, and spices. Simmer for a few minutes.
  • Stir in heavy cream and parmesan cheese, then return chicken to the skillet. Cook until sauce thickens.
  • Garnish with fresh basil and additional parmesan before serving.

Notes

Use oil-packed sun-dried tomatoes for richer flavor. Adjust spice levels to taste.
