Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper, then roast for 25-30 minutes.
While potatoes roast, mix Dijon mustard and maple syrup to make the sauce.
Season chicken breasts with salt and pepper, then cook in a skillet until browned and cooked through, about 6-8 minutes per side.
Slice cooked chicken and serve over roasted sweet potatoes, drizzled with the maple Dijon sauce. Garnish with fresh herbs if desired.
Notes
For extra flavor, add a squeeze of lemon or fresh herbs on top before serving.
