Ingredients
  

Bananas

  • 1.5 cups mashed ripe banana about 3 medium ripe bananas
  • 0.5 cup salted butter melted
  • 1 large egg at room temperature
  • 0.5 cup pure maple syrup at room temperature
  • 0.5 teaspoon vanilla extract
  • 1.5 cups sifted all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1.5 teaspoons baking soda
  • 0.25 teaspoon salt

Instructions
 

  • Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  • Mix mashed bananas and melted butter until combined.
  • Stir in egg, maple syrup, and vanilla extract.
  • Add flour, cinnamon, baking soda, and salt; stir just until combined.
  • Divide batter into muffin cups, filling about 2/3 full. Bake 15-25 minutes until a toothpick comes out clean.
  • Cool muffins in pan 5 minutes, then transfer to wire rack.

Notes

For best results, use ripe bananas for natural sweetness.
