Instructions
Preheat oven to 325°F (160°C). Toast coconut flakes for 5 minutes, stirring after 3 minutes, then cool.
Mix toasted coconut with granola and salt. In a bowl, combine yogurt, honey, vanilla, and lime zest until smooth.
Dice mango, toss with lime juice, and let sit for 5 minutes.
Layer yogurt, mango, and coconut crunch in glasses, repeating layers. Drizzle with honey and garnish with mint and lime zest if desired.
