Instructions
Bake tater tots according to package instructions and let cool.
Preheat oven to 400° F.
Sauté sausage in olive oil until browned, then drain fat.
Mix drained Rotel tomatoes with sausage, then add scrambled eggs.
Assemble burritos with tater tots, cheese, and sausage mixture, then bake for 12-15 minutes.
Serve immediately or freeze for later.
