Ingredients
  

Main Ingredients

  • 4 cups frozen tater tots
  • 2 tbsp olive oil
  • 2 lbs bulk sweet italian sausage (or hot if you prefer)
  • 16 count eggs
  • 2/3 cup half and half
  • 20 8-inch flour tortillas
  • 2 cups shredded cheese (cheddar, pepper jack, colby jack, whatever you prefer)

Instructions
 

  • Bake tater tots according to package instructions and let cool.
  • Preheat oven to 400° F.
  • Sauté sausage in olive oil until browned, then drain fat.
  • Mix drained Rotel tomatoes with sausage, then add scrambled eggs.
  • Assemble burritos with tater tots, cheese, and sausage mixture, then bake for 12-15 minutes.
  • Serve immediately or freeze for later.
