Ingredients

  • 2 cans chickpeas, rinsed and roughly chopped
  • 2 to 3 pcs roma tomatoes, chopped
  • 0.5 pcs red onion, finely chopped
  • 1 bunch flat leaf parsley, finely chopped
  • 0.5 bunch mint, finely chopped
  • 0.5 tsp lemon zest
  • 3 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • to taste Salt and pepper
  • 2 cans chunk-light tuna in water, drained

Instructions
 

  • Combine chickpeas, chopped tomatoes, red onion, herbs, lemon zest, lemon juice, olive oil, and garlic in a large bowl.
  • Gently fold in the drained tuna until just combined.
  • Season with salt and pepper to taste, then serve immediately or let sit at room temperature for enhanced flavor.
