Ingredients
  

Lemon Whoopie Pies

  • 0.5 cup All-Vegetable Shortening
  • 1 cup granulated sugar
  • 1 egg egg
  • 1 teaspoon vanilla extract
  • 0.25 cup buttermilk
  • 0.25 cup warm water
  • juice and zest of 2 meyer lemons lemon juice and zest about 1/3 cup lemon juice
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Cream Cheese Frosting

  • 8 ounces cream cheese (softened to room temperature)
  • 0.5 cup unsalted butter (softened to room temperature)
  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 0.125 teaspoon salt

Instructions
 

  • Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
  • Cream shortening and sugar until light and fluffy, about 3 minutes.
  • Add egg, vanilla, buttermilk, water, lemon juice, and zest; mix until combined.
  • Mix dry ingredients separately, then gradually add to wet mixture; mix until just combined.
  • Drop batter onto baking sheets using a 1-tablespoon scoop, 2 inches apart. Bake for 6-7 minutes.
  • Cool cakes on sheets 5 minutes, then transfer to wire racks. Make frosting by beating cream cheese and butter, then adding powdered sugar, vanilla, and salt until thick.

Notes

Ensure frosting is well chilled before spreading for best texture.
