Ingredients
  

Pasta

  • 12 oz penne I always use Barilla for the best al dente texture

Vegetables

  • 1 red onion red onion
  • 1 pint cherry tomatoes halved lengthwise for easier eating

Seasonings

  • salt salt
  • black pepper black pepper

Protein

  • 8 oz salmon patted dry to ensure a better sear

Dressing & Flavor

  • 1 lemon lemon juice
  • 1/2 cup pesto prefer Filippo Berio Classic Pesto for a homemade taste
  • fresh basil fresh basil
  • 1/3 cup parmesan freshly grated for better melting and flavor

Instructions
 

  • Cook the penne according to package instructions until al dente, then drain and set aside.
  • Season the salmon with salt and black pepper, then sear in a hot skillet until cooked through, about 4-5 minutes per side. Flake into large pieces.
  • In a large bowl, combine cooked pasta, cherry tomatoes, red onion, and salmon.
  • In a small bowl, whisk together lemon juice, pesto, and chopped basil. Pour over the pasta mixture and toss to combine.
  • Garnish with freshly grated parmesan and additional basil if desired. Serve immediately.

Notes

For extra flavor, let the salad sit for 10 minutes before serving to allow the flavors to meld.
