Ingredients
  

Pasta

  • 12 oz penne I always use Barilla for the best al dente texture

Vegetables

  • 1 red onion red onion
  • 1 pint cherry tomatoes halved lengthwise for easier eating

Seasonings

  • salt salt
  • black pepper black pepper

Oil

  • 2 tbsp olive oil

Protein

  • 8 oz salmon patted dry to ensure a better sear

Dressing & Flavor

  • 1 lemon lemon juice
  • 1/2 cup pesto prefer Filippo Berio Classic Pesto for a homemade taste
  • fresh basil fresh basil
  • 1/3 cup parmesan freshly grated for better melting and flavor

Instructions
 

  • Cook the penne according to package instructions until al dente, then drain and set aside.
  • In a skillet, sear the salmon over medium-high heat until cooked through, then flake into pieces.
  • In a large bowl, combine cooked pasta, seared salmon, halved cherry tomatoes, and sliced red onion.
  • Whisk together lemon juice, pesto, olive oil, salt, and black pepper to make the dressing.
  • Toss the salad with the dressing, then garnish with fresh basil and grated parmesan before serving.

Notes

For extra flavor, let the salad sit for 10 minutes before serving to allow the flavors to meld.
