Lemon Rice

Ingredients
  

oil

  • 2 tbsp extra virgin olive oil

pasta

  • 1/2 cup orzo pasta
  • 1 cup long grain rice (basmati or jasmine preferred)

broth

  • 3 cups chicken broth
  • 1/4 cup unsalted butter
  • 1 tbsp Greek seasoning
  • 1 lemon lemon (juiced & zested)
  • salt & pepper to taste salt & pepper

Instructions
 

  • Add oil to a skillet over medium-high heat. Toast orzo and rice until golden.
  • Pour in broth, add butter and Greek seasoning. Season with salt and pepper.
  • Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  • Stir in lemon juice and zest, then fluff and serve.

Notes

For extra flavor, garnish with fresh herbs or additional lemon.
