  • 4 pieces bone-in skin-on chicken thighs pasture-raised, organic when possible
  • 2 tsp dried Italian herbs or 1 tsp dried basil + 1 tsp dried oregano
  • 1 tsp sea salt
  • 1 tsp red pepper flakes optional
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 Tbsp olive oil or avocado oil
  • 1 medium lemon thinly sliced into rounds
  • 3-4 Tbsp fresh herbs thyme, rosemary, sage, removed from stems and torn

Instructions
 

  • Preheat oven to 375°F (190°C) and heat a cast iron skillet on the stovetop.
  • Mix herbs, salt, red pepper flakes, black pepper, and garlic powder; season chicken evenly on both sides.
  • Heat oil in skillet, sear chicken 3-4 minutes per side until golden brown.
  • Add lemon slices and herbs to the skillet, then transfer to oven and bake for 10-15 minutes.
  • Rest chicken for 5 minutes before serving. Serve with potatoes and pesto if desired.

Notes

Ensure the internal temperature reaches 170°F for safe consumption.
