  • 4 pieces bone-in, skin-on chicken thighs
  • 1 large lemon half sliced, half juiced
  • 3 tablespoons olive oil
  • 2 sprigs fresh rosemary roughly chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Instructions
 

  • Pat chicken thighs dry with paper towels for crispy skin.
  • Whisk together olive oil, lemon juice, rosemary, thyme, garlic, salt, pepper, and paprika.
  • Rub herb mixture onto chicken, then arrange in a baking dish with lemon slices and rosemary.
  • Preheat oven to 400°F (200°C) and roast chicken for 35-45 minutes until skin is golden and internal temp reaches 165°F (74°C).
  • Rest chicken for 5-10 minutes before serving to retain juices.
