Ingredients
  

Marinade and Dressing

  • 2 tablespoons olive oil
  • 0.25 cup fresh lemon juice about 1 lemon
  • 2 tablespoons water
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons dried basil
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • to taste cracked black pepper
  • 1 pound boneless, skinless chicken thighs or breasts

Salad Ingredients

  • 4 cups Romaine (or Cos) lettuce leaves washed and dried
  • 1 large cucumber diced
  • 2 large Roma tomatoes diced
  • 1 red onion thinly sliced
  • 1 avocado sliced
  • cup pitted Kalamata or black olives sliced (optional)
  • 2 lemon wedges to serve

Instructions
 

  • Whisk all marinade ingredients in a large jug. Pour half into a dish and refrigerate the rest.
  • Add chicken to the dish with marinade, coat well, and marinate for 15–30 minutes. Prepare salad ingredients in a large bowl.
  • Heat 1 tablespoon olive oil in a skillet, grill chicken until cooked through, then rest and slice.
  • Arrange sliced chicken over salad, drizzle with remaining dressing, and serve with lemon wedges.

Notes

Marinate chicken for deeper flavor and serve immediately for best freshness.
