Instructions
Whisk all marinade ingredients in a large jug. Pour half into a dish and refrigerate the rest.
Add chicken to the dish with marinade, coat well, and marinate for 15–30 minutes. Prepare salad ingredients in a large bowl.
Heat 1 tablespoon olive oil in a skillet, grill chicken until cooked through, then rest and slice.
Arrange sliced chicken over salad, drizzle with remaining dressing, and serve with lemon wedges.

Marinate chicken for deeper flavor and serve immediately for best freshness.
