Lemon Herb Grilled Chicken with Garlic Butter Rice

Ingredients
  

Protein

  • 4 pieces boneless skinless chicken breasts or thighs, if preferred
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp lemon zest
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper

Carbohydrate

  • 1 cup long-grain rice like basmati or jasmine
  • 2 cups chicken broth

Dairy

  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tsp parsley freshly chopped, for garnish

Seasonings

  • Salt and pepper to taste

Instructions
 

  • Marinate chicken with lemon juice, zest, garlic, oregano, thyme, salt, and pepper.
  • Grill chicken until cooked through, about 6-8 minutes per side.
  • Cook rice in chicken broth until tender, about 15 minutes.
  • In a pan, melt butter and sauté minced garlic until fragrant, then stir in cooked rice and garnish with parsley.
  • Serve grilled chicken with garlic butter rice.

Notes

For extra flavor, add a squeeze of fresh lemon over the chicken before serving.
