uncooked couscous

lemon zest

Instructions
Melt butter and heat olive oil in a small pot over medium heat. Add chopped lemon and cook for 1 minute.
Add water, bring to a boil, then remove from heat. Stir in couscous, cover, and let rest for 5 minutes.
Fluff the couscous with a fork.
Stir in lemon zest and chopped parsley. Serve immediately.
Notes
For extra flavor, add a squeeze of fresh lemon before serving.
